Goldilocks and Oatmeal

OK, you got me.  I have no golden locks running through my dark brown hair and have never even once wandered into a bear’s home out in the woods… but I do love me some oatmeal.  It is a great comfort food.  Just the word brings floods of childhood memories and kitchen smells.  I was blessed with a mom that prepared a home cooked breakfast for me every day of my childhood and oatmeal was a staple.  Of course mom’s oatmeal was full of butter, sugar and love.  It took me years to even try oatmeal any other way and even longer to come up with my new favorite porridge …that is just right…

Berry Berry Oatmeal

5 c water
1 ½ tsp salt (very important to taste)
2 ½ cup Quaker Rolled Oats
½ cup dried berries (I use great value mixed)
½ cup chopped walnuts
2 tsp vanilla
⅓ cup milled flax seeds
⅓ cup wheat germ
  1. Bring water and salt to a boil.
  2. Stir in the oats, berries and walnuts.
  3. Continue to stir and cook on medium heat for 5 minutes.
  4. Set off the heat, add vanilla, flax seeds and wheat germ
  5. Cover and let stand for five minutes.
  6. Serve or store…
  • Divide into 7 small containers (3/4 cup each) to keep in fridge.
  • Add a little milk and heat in the microwave (1-1/2 minutes) for a quick breakfast.
  • Add 1-2tsp of honey after heating and before eating to sweeten or use an alternate sweetener.

If this recipe isn’t “just right” for you, keep trying other “add ins” until it is.  In my search I have tried apples and cinnamon, peanut butter and banana, frozen berries, pumpkin and all spice, splenda, truvia and whatever else I could find in my kitchen.
