So I’ve been busy cooking this morning. My son’s graduation party is all set for tomorrow night. The family has been contacted, the BBQ has been ordered and all the plans are coming together to celebrate his accomplishments. So what is a mom to do – other than to make some homemade sinful desserts? Life doesn’t stop just because you commit to a healthy lifestyle. Mom still has to be mom and cook some sinful things sometimes for her family. It just goes with the job title of “mom” and I wouldn’t trade in that title for the world. Wife and mom is my main title and who I really am deep down inside. All this personal trainer, group fitness instructor, blogger and everything else about me is just extra – like the frosting on top of a graduation cake. 🙂
I may or may not partake of the sin I am preparing. I’ll just have to wait and see how my calories go tomorrow and if I get a workout in before we leave in the morning. OK, that is most likely a lie. I am probably premeditating right now in exactly how much sin I will allow myself to indulge. My plan, as always in this type of situation, is to go in full well knowing the cost and be very selective on how I spend my calories and make every bite worth the cost. I will not go hog wild and throw caution to the wind and just decide to have an all-you-can-eat buffet of calories but rather eat what I really want, skip on what is just mediocre in my world compared to the other goodies on the table and control my portions of what i do eat. Sounds like a plan! Now all I have to do is stick to it.
So in the mean time, in honor of keeping my diet tight and clean in order to have wiggle room tomorrow, I will be eating especially carefully today. In making my lemon ice box cheese cake (yes, you heard me right – can you believe it? It is totally sinful and just as good as it sounds.), I had some leftover egg whites to be discarded. You know that nothing as healthy as an egg white could ever find its way into such a sinfully delicious dessert. It happened to be snack time as I was cleaning up the kitchen so I decide to balance out this bad thing I was doing and make some good out of it. I looked around to see what else I had in the kitchen and came up with a pretty decent clean snack…
Egg White Omelet
- Pam cooking spray
- 2 chopped roma tomatoes
- 1/2 cup – 1 cup baby spinach (torn in pieces)
- 2-3 egg whites
- garlic salt to taste
- dried basil to taste
- 1/2 ounce shredded cheddar cheese
- Spray small skillet with cooking spray on medium heat and add in spinach and tomatoes.
- Sprinkle with garlic and basil while stirring. Heat until spinach starts to wilt.
- Pour in egg whites and stir. Add more seasoning if desired (including cayenne pepper). Put on a lid to help eggs to set.
- When eggs are set, sprinkle with a small amount of shredded cheese. Allow to melt and then transfer to a plate and enjoy.
So there you have it. Left over sin can be turned to good. Sometimes bad things happen in our life. Sometimes it is a result of our sin, sometimes it is a result of the sin of others and sometimes it is just circumstances that are not the fault of anyone. God doesn’t prevent all bad things in our life, but He does promise to make some good come out of it for his children. Check out Romans 8:28, “And we know that all things work together for good to them that love God, to them who are the called according to his purpose”.
Keep that in mind next time you feel defeated after a misstep (whether it be in your fitness journey or life in general). Learn from your mistake, turn to God for help and look for the good that will come from it.
Be fit. Be strong. Make it good.
